The story

About Carbon Taqueria

The inspiration

Carbon Taqueria is the next-generation concept from The Taco Man, built around a deliberately short menu and premium upgrades, with owner Israel Miranda telling WhatNow he wanted to streamline things the way In-N-Out does rather than clutter the board1 . The cooking itself centers on USDA Prime meats grilled over mesquite charcoal for a smoky flavor, with an open kitchen that lets you watch it happen2 .

Who's behind it

Owner Israel Miranda founded The Taco Man in 2003 and built a catering business that served L.A. clients including the Clippers and the Galaxy before expanding into restaurants1 . Carbon is family-owned .

Popular dish

Arrachera Taco

skirt steak with that unmistakable smoky char; Follow My Gut calls the meat version across the menu deeply satisfying .

  • Arrachera Tacodilla: a taco-quesadilla hybrid with melted cheese and tender steak on a toasted tortilla .
  • Chips and the salsa bar: house-made salsas to go with the mesquite-grilled meats .2,3

What people are saying

Follow My Gut goes further, describing the space as clean and modern and the arrachera dishes as reason enough to keep coming back .

Why you should try it

If you're staying near Azusa, this is a quick, casual stop where the taco place does one thing carefully: prime meats over charcoal in an unfussy setting2 . Grab a few tacos, work the salsa bar, and watch the kitchen work2 .
