The story

About Chengdu Taste

The inspiration

The restaurant exists to showcase authentic Chengdu cooking rather than pure fire, with owner-chef Tony Xu saying he wanted it to reflect the culture and tastes of his hometown rather than just good food1 . Its food follows a lighter, cleaner Chengdu style compared with the heavier Chongqing-style Sichuan that had dominated the San Gabriel Valley2 . Time Out credits the Alhambra original with putting mala, the numbing-spicy flavor, on the culinary map for most Angelenos3 .

Who's behind it

Tony Xu, a Chengdu native who apprenticed under local chefs and ran a Sichuan-style restaurant in China before moving to Los Angeles in 2005, opened Chengdu Taste in June 2013 after stints including one with Panda Restaurant Group4,1 . He runs it with his partner Sean Xie, who is Chengdu-raised and a USC graduate5 . The Infatuation describes it as a family-run operation6 .

Popular dish

Toothpick lamb with cumin7,6

skewered little lamb pieces rubbed with cumin, an aromatic signature that works well for groups .

  • Diced rabbit with younger sister's secret recipe: an early signature and classic Chengdu dish that helped establish the restaurant .4,2
  • Sichuan-style mung bean jelly noodles with chili sauce: a cold appetizer praised across reviews .3,6
  • Mapo tofu: a familiar Sichuan stew that The Infatuation says none in town can match, mildly spicy and big enough to share .6
  • Couple's sliced beef with chili oil: a cold, garlicky beef dish that balances out the hotter plates .6

What people are saying

Reviewers keep returning to the theme of numbing Sichuan peppercorns and full-throttle mala heat7,3 . Critics also note the lighter, cleaner Chengdu-style cooking compared with pure Chongqing fire, where the sensation leans toward numbness rather than pain2 . The MICHELIN Guide has recognized it with a Bib Gourmand7 .

Why you should try it

If you are staying nearby, this is a Michelin Bib Gourmand pick for Sichuan cooking7 . Start with the toothpick lamb and a cold appetizer such as the mung bean jelly noodles7,6 .
